Do you have to pay these sites to join? How exactly do you set up PayPal? I heard of it before but I really do not know anything about Pay Pal.

You account will be linked through paypal. To get paid via paypal all you will have to do if give the payer the e-mail address you used to setup paypal and payments will get sent to your bank account via paypal automatically. This is a lot safer than having to give unknown sites your personal info. Read the FAQs on the Paypal site for more info.

3Thus far, I have recieved checks in the mail from Pinecone Research. They pay $3/survey. You will have to search for their banner to get invited to take their survey. I have also recieved checks in the mail from e-Rewards. Every now and then they will mail me a invitation to go online and take a survey for $5 check. You also earn money on their site for taking surveys and can redeem for rewards such as magazines, gift cards, etc. I recently earned $12 last week and redeemed my earnings for a year subscription to "Prevention Magazine." I'm hoping this magazine will help me lose my baby weight after I have my baby in July. I have a long list of other sites I've joined to earn cash for surveys, but the posted paid surveys sites are legit as well. I just joined myself and working my way to earn a check.
oDesk is actual work and it's free to join. You pick what assignments you want, but you have to bid. You decide how much you want to get paid for accepting the assignment and the payer decides who they want to hire to complete the task.
